Tips for Spicing Up Seafood
The allure of exotic spices launched Columbus on his journey of discovery. Today, home chefs can explore new taste sensations by using spices and other flavorful ingredients to add a new world of flavor to fresh fish and seafood.
“There’s nothing like the fresh flavors of herbs and spices for cutting unhealthy calories without sacrificing taste,” said Red Lobster Executive Chef Michael LaDuke, who offers the following simple tips for enhancing the natural flavor of fresh fish and seafood:
World of Flavors: An easy recipe that turns fresh fish into an exotic dish is topping tilapia with a mixture of soy sauce, lime juice, orange juice, fresh ginger, garlic and cilantro. To produce a richer flavor, make the soy sauce mixture at least 24 hours in advance and refrigerate the sauce overnight. Serve the sauce at room temperature or slightly warmed. With its sweet, mild taste and firm, flaky texture, tilapia will soak up the flavors and take on a deliciously Asian flair.
If you prefer a delicately flavorful fish such as halibut, complement its medium-to-firm texture with bold spice blends such as curry or chili.
Healthy Oils: The key to making flavorful oils for a simply elegant and heart-healthy meal is to add herbs and spices, such as basil, garlic, salt and pepper, to olive oil over a low heat on the stove, similar to making tea. This allows you to adjust the intensity of the flavor. After heating the olive oil, strain the mixture and remove the herbs and spices. For a special touch, place the olive oil on your table surrounded by sprigs of the fresh herbs and spices.
Be adventurous! Add a variety of flavorful herbs and spices to your oil mixture, such as exotic peppers, chives, dill, lemongrass or mint. If you serve olive oil over salmon, you’ll also enjoy the heart-health benefits of essential omega-3 fatty acids found in this delicious fish.
Cooking With Wine: Wine is not only good for drinking, it’s also great for cooking. Pour white wine, such as a Sauvignon Blanc, over a firm white fish like mahi-mahi and season it with chili powder to intensify the flavor. Mahi-mahi is light enough to bring out the crisp citrus taste of this popular wine. But remember, your sauce will be only as good as the wine you choose, so always cook with a wine you enjoy drinking.
Adding Some Zest: Add the tangy flavor of citrus by generously squeezing lemon, lime, orange or grapefruit juices over your favorite fish or seafood and garnishing with freshly grated zest. When using fruit zests as a garnish, it is best to slightly poach them beforehand in sugar water, as raw zests can taste bitter.
For quick, tasty meals, make a citrus butter ahead of time by combining melted butter and citrus juices, cooling the mixture and storing it in the refrigerator until ready to use. Citrus juices mixed with melted butter also make great dipping sauces for succulent lobster and shrimp.
Studies show eating fish rich in omega-3 fatty acids, including mackerel, lake trout, herring, sardines, albacore tuna and salmon, at least twice a week is good for the heart. Using an array of herbs and spices offers endless opportunities to bring out the best in all varieties of fresh fish and seafood.

Cooking the Best Fajitas
Fajita is generally beef, chicken, pork or shrimp grilled and served on a flour tortilla with condiments. The chicken is worked with onions and bell peppers. Fajita is served to the table sizzling loudly on a metal platter with tortilla and condiments on the side. Making your lips watery?
Texans would love to take credit for giving the world fajitas but the honor goes to south of the border, Vagueros, who learnt the art of cutting tough beef into skirt steak. Fajitas are basically Tex Mex dishes. Nowadays Fajita is almost anything cooked and wrapped in a flour tortilla. Only true fajitas are skirt steak.
The preparation of Fajitas starts with marinating the beef using limejuice to tenderize at least for 24 hours. Well, there are no set rules for marinating; you can use your creative sense for that, but don’t forget to use limejuice. To marinade beef or chicken, you can use the Ass Kickin Soakin’ and Grilling Sauce. This would bring a true Mexican flavor.
Fajitas are real fun to eat, and here are the ways to cook the best Fajitas, namely:
Grilling an exciting fajita
Traditional method for cooking fajita is over coal for approximately 6 minutes on both sides for skirt steaks around one pound. After the meat gets cooked, you should let it rest for a few minutes and cut it across the grain diagonally into finger length strips.
Oven broiling fajitas
Broil the meat 4 inches below the flame for about 6 minutes on both sides. Then you can let it rest for a few minutes and slice it diagonally into finger length strips.
Pan frying fajitas
Drain the meat and cut it across the grain in finger length strips and fry over high heat for not more than 1.5 minutes turning frequently. Roll them in flour tortilla. Choose thick tortillas available in any supermarket. Warm them up by sealing in foil packages, 6-8 at a time. On a frying pan, add few tablespoon of olive oil, cut one large onion and separate into rings and cut bell peppers into strips. Add them to the frying pan and stir fry. Serve with stir fried onions and bell peppers.
Some specialized fajita preparations are Pico-de-gallo, guacamole, Fajita on a stick, Fah-HEE-Tah, Beef Fajita Marinade and many more. Here are a few, which I find interesting, but you can always add your magic touch to them:
Pico-de-gallo
This fiery and flavorable salsa is like any other salsa but the ingredients are finely chopped. If rightly made it is hot. Since people make it to their liking they can control the heat.
Guacamole
Cool and buttery smoothness of guacamole adds the finishing touch on a fajita. Experiment your ideas on it and get it right. My suggestion is to select the right Avocado of Haas variety with brownish-black skin with a pebbly texture.
Fah-HEE-Tah
Traditional skirt steak has to be marinated for long 24 hours in limejuice, red capsicum and garlic. Cooked meat is cut into strips and them wrapped in a warm tortilla and garnished with salsa or guacamole.
Fajita On A Stick
Soak 8-9 bamboo skewers for 10 minutes. Trim fat from steak and cut crosswise into ½” thickness. Thread equal amount of beef weaving back and forth onto skewer. Combine dressing and lime juice. Brush on beef peppers and onions. Place vegetables on grid for 15 to 20 minutes. Remove and add beef to the centre. Add salt. When ready, serve beef and vegetables in tortilla with salsa.
Beef Fajita Marinade
Combine limejuice, tequila, crushed dried oregano leaves, cloves of garlic, minced fresh cilantro, ground cumin, ground black pepper. Mix well and pour marinade over meat, refrigerate overnight or even 24 hours in zip top bag. It makes enough marinade for 1 ½ pound flank steak.
Fajitas are terrific for informal dinner party. It is inherently festive or goes hand-in-hand with margaritas or Mexican beer and Tex Mex treat. Good Luck! Taste your own Fajitas, don’t go for the restaurant version of Fajitas.

Spice Up Your Dishes with Argentine Chimichurri
Chimmichurri is a green sauce used for grilled meat
One of the favorite cooking methods in Argentina is, without a doubt, grilling. This style of cooking is derived from the original Argentinian Gaucho tradition of cooking fresh meat over a charcoal fire.
To add flavor and tenderize the meat, Argentinians often marinate meats in Chimichurri. Food without Chimichurri just wouldn’t be tolerated in Argentina especially grilled meat to which it adds an amazing flavor.
Ingredients:
1/3 packet of garlic salt
6 chilli peppers
2 sachets bouquet garni
1 large onion
½ tub of dried peppers
1 pint of vinegar
2 pints oil
Directions:
Boil all the ingredients, excluding oil, together in the vinegar for five minutes. Wait until the mixture cools. When the mixture has cooled, add the oil. Store in refrigerator.
When you’re ready to barbecue or grill, marinade meat in chimichurri overnight. Barbecue, grill or cook in the oven. Enjoy!
